Do you know how to use saffron?
Saffron is the red pistil of the crocus sativus flower. This pistil is composed of three stigmas. It is from these stigmas that the recipes are established. We count the strands (filaments) one by one, because it does not take much to flavor a dish.
To use the stigmas, they must be infused in a liquid for at least 20 minutes, but several hours up to 24 hours is even better to give it time to release all its aromas. This liquid can be water, broth, fresh cream, milk, fruit juice, or even alcohol such as white wine or cognac. This liquid must then be used to flavor the dish at the very end of cooking.
Never boil, fry or cook over high heat, as its aromatic molecules will be destroyed. For casseroles, it is best to use it about 20 minutes before the end of cooking.
